Made these for breakfast this morning, but substitued Maribeth & hubby's homemade peach compote in the place of apples.
6 medium Granny Smith or Newtown Pippin (it comes in pints!) apples (2 lbs)
2 tbls butter
1/2 cup plus 2 tbls sugar
3 large eggs
3/4 cup milk
3/4 cup flour
1/4 tsp salt
Peel & core apples; cut each into 8 wedges. Preheat oven to 425 degrees. In 12-inch skillet with oven-safe handle, heat butter, 1/2 cup sugar & 1/4 cup water to boiling over medium-high heat. Add apples wedges to mixture in skillet; cook, stirring occasionally, about 15 minutes, until apples are golden and sugar mixture begins to caramelize.
Meanwhile, in blender at medium spped or in food processor with knife blade attached (I used a wire whisk), blend milk, eggs, flour, salt and remaining 2 tbls of sugar until smooth. When apples are golden and lightly caramelized, pour egg mixture over. Place skillet in oven; bake pancake 15 minutes or until puffed and golden. Serve immediately.
This came out SO good, but I think I left it in the oven just a bit too long; the sugar mixture in the bottom of the pan REALLY caramelized into crunchiness. But it was still good :-)

That sounds REALLY good! J and me are on phase 1 of the South Beach Diet, so we are eating alot of eggs for breakfast and turkey bacon. Oh God I've been craving sweets bad. We just have a week left tho' to be on it. If you don't mind, might have to check it out in a couple of weeks? :D
sounds good, but top that off with a big scoop of vanilla ice cream and it would be perfect!
