This is Charlotte's last week as the Getting To Know You hostess this month. She says: What better way to get to know someone than over food?! Some of our best times are spent visiting with friends and family over a delicious meal. My challenge for you today is to share a recipe with us and tell us why you chose it. Is there a memory attached? Is it a family recipe that's been passed down through the generations? Did you cook it at your first dinner party in your first apartment? Is it a recipe from a famous chef that you've mastered?
I'm going to share a recipe for summertime...it's very simple, sweet & cool and new to me...but I love it so much I want to tell the world!

Cucumber, Mango and Black Bean Salad
This is the original recipe, I'll add my changes as I go along!:
1 cup chopped seeded cucumber [I used 1/2 an english cuke, peeled, too]
1/2 cup chopped mango [I used a whole mango]
1/2 cup canned black beans, rinsed and drained [I used a whole can of black beans]
2 tablespoons minced seeded jalapeno pepper
1 tablespoon chopped fresh cilantro
2 tablespoons fresh lime juice
1 tablespoon fresh orange juice
1/2 teaspoon salt
Preparation:
Combine all ingredients in a bowl, stirring gently. Let stand 15 minutes before serving. Makes 4 servings (serving size: 1/2 cup)
I love adding this to some brown rice and tofu or grilled chicken. Ooooh yum! Nutritional info (which applies to the original recipe) follows...

You have to make oodles of this and of Miss Julia's potato salad for the 4th! I may opt only to eat the Mango salad though as it is tooooooo yummy!!!
